Ingredients
1 can Cannellini Beans, chickpeas/garbanzo and red kidney beans. 15.5 oz (439 grams)
1 medium Red onion chopped.
10 oz Cherry Tomatoes 285 grams
1/4 cup Extra virgin olive oil 59 ml
4 tbsp Red Wine Vinegar/White Vinegar/Apple cider Vinegar.
1/4 cup Kalamata & green olives Based on your preference
10 leaves Fresh Basil chopped.
5 sprigs Fresh Parsley (Chopped)
2 Green chili peppers chopped.
1/2 cup Pickled eggplants Please check my other video tutorial on “How to pickle eggplant”.
Salt and Fresh Cracked Black Pepper to taste.

- Rinse the beans under running cold water and drain in a colander.
- In a large bowl combine all the ingredients.
- Add salt and pepper to your taste.
